The Super Chef's Knife

(One of the Medieval Kitchen Knives series of unique, ancient looking, high performance chef's knives)

This graceful general purpose Chef's knife has a 6-3/4" blade of 1/8" 154CM, upswept, forged to shape with an as-forged finish, differentially hardened to HRC62 at the edge, HRC52 at the spine, with a visible hamon, or differential temper line. Brass bolsters and pins with Cocobolo scales. 11-3/4" overall. $339 SOLD

Note that 154CM is a high carbon, high chromium cutlery steel, so the finish on this knife will stay as is, and won't tarnish nor rust like a simple alloy steel such as 1080 may.
